The Farm
CENCOIC is a co-operative made up of indigenous communities in Colombia’s Cauca region, where positive political change has helped strengthen local farming. Coffee is grown alongside panela, plantains, pineapples, yucca, and lemons subtle influences that shine through as a natural sweetness in the cup.
The Region
Colombia’s diverse landscape stretches from the Amazon rainforest to the peaks of the Andes. Once the world’s largest producer of washed coffee, its terrain split into three key growing regions by the Andes creates two main harvest seasons, meaning fresh coffee is available year-round. Varieties and producers naturally shift throughout the seasons.
Typica was widely grown until the 1970s, when Caturra became more popular due to its higher yields and compact growth. In 1982, the Colombia variety was introduced, combining Caturra with the Timor hybrid for improved resistance to leaf rust. This was followed by Castillo in 2005, offering further gains in productivity, resilience, and cup quality.
The Process
Once ripe, cherries are handpicked and sorted using flotation to remove underripe fruit and debris. They are then pulped and guided through washing channels into fermentation tanks, where they rest for 8–14 hours. After fermentation, the beans are dried on patios or in guardiolas until they reach 10–12% moisture.
In Colombia, this process is typically carried out on the farm before the coffee is sent to a dry mill for grading, tasting, and blending. The beans are stored in parchment until export, when they are hulled and prepared for shipping. Beans graded at size 15–16 are classified as Excelso.
This is a deeper roast expression that brings forward strong chocolate intensity, gentle bitterness, and a structured, powerful profile.
In Traditional Chinese Medicine (TCM)-inspired thinking, darker roasts are associated with warming, grounding energy, traditionally enjoyed for focus, presence, and strong morning activation.
This coffee reflects a more robust rhythm, ideal for clarity, momentum, and structured energy, especially in the first half of the day or after heavier meals.
