Naturally decaffeinated without the use of chemicals, this coffee is rich and nutty, with notes of maple syrup, praline, and milk chocolate.
The Coffee:
This coffee is decaffeinated using only green coffee extract and water, with no chemicals, resulting in 99.9% caffeine-free beans. First, a Green Coffee Extract (GCE) is created by soaking caffeinated beans in water, capturing all the water-soluble solids without the caffeine. The beans to be decaffeinated are then cleaned and rehydrated to the optimal level before being placed in a large container where the GCE is continuously circulated. Over 8–10 hours, caffeine is removed through osmosis and filtered out of the extract using a carbon filtration system.
The Region:
Located in western Honduras, the Ocotepeque Department is a mountainous region known for its rich agricultural tradition. Bordering Guatemala and El Salvador and surrounded by national parks, it offers stunning landscapes and ideal conditions for coffee cultivation.
Naturally decaffeinated using the Swiss Water Process, this coffee preserves the integrity of the bean while delivering a clean, rounded cup with gentle depth and sweetness.
In Traditional Chinese Medicine (TCM)-inspired thinking, decaffeinated coffees are associated with neutral, grounding energy, traditionally enjoyed for comfort and ritual continuity without stimulation.
